1 large globe eggplant
Sea salt
Olive oil
Herbs
Spaghetti sauce
Kalamata olives
Canned artichoke hearts
Fresh basil
Goat cheese
Feta cheese
Slice eggplant in 3/4 inch rounds. Place on double thickness of paper towels and sprinkle with salt, about 1 tablespoon should do it. Let sit for about 20 minutes. Believe me, this improves the flavor of the eggplant. Do not skip this step! Preheat your oven to 400 degrees.
After 20 minutes, wipe away the salt and moisture from the top of the eggplant rounds. Place the rounds on a cookie sheet. You can sprinkle them with olive oil and herbs if you would like. Roast eggplant rounds in the oven for 20 minutes.
Once the eggplant is roasted, add your toppings. I've suggested spaghetti sauce, kalamata olives, artichoke hearts, fresh basil, goat cheese, and feta cheese. But make your own combination. Put under the broiler in your oven until the cheese is melted--just a couple of minutes.
